If you only pay attention to a few small things when storing horseradish, the healthy ingredients of the spicy vegetable will be preserved as far as possible. In addition, horseradish stays fresh and aromatic for a comparatively long time when stored correctly.
Horseradish – preserving the nutrients with the right storage
- The taste of horseradish is unmistakable and certainly not everyone’s cup of tea. The root vegetable owes its pungency to the mustard oils, which are not only aromatic but also healthy.
- However, these are not the only healthy components of horseradish. Would you have known that the root vegetable brings more vitamin C than a lemon? And not just a little more, horseradish has twice as much vitamin C.
- While 100 grams of lemon contain around 50 milligrams of vitamin C, horseradish has over 110 milligrams.
- To preserve the nutrients and distinctive flavour of horseradish, proper storage is essential. Essential oils in particular have a tendency to volatilise quickly, which means that the flavour of the horseradish is largely lost.
Storing horseradish – this keeps the vegetable fresh and aromatic
- If you have your own garden, you not only have organic horseradish at hand at all times, you also have the optimal storage option.
Bury the unwashed root vegetables in moist sand. This will preserve the nutrients and flavour of the horseradish for three to four months. - If you don’t have a garden or patio, you still have the freezer to store the horseradish for a few months.
- Before you freeze the vegetables, wash them. Then dry the roots well and leave them overnight so that the vegetables dry well. Put the unpeeled horseradish in portions in freezer bags or freezer tins.
- As a general rule, only cut off as much of the vegetable as you need. You can either put the horseradish that has not yet been peeled in a fresh-keeping tin or wrap it in cling film. Then put it in the crisper.
- If you have overzealously grated too much horseradish, put it immediately into a jar and seal it well. Then put the jar in the fridge. Use up the grated horseradish within one to two weeks.
- Note: Horseradish is not a vegetable that should be dried. The root loses the mustard oil and thus its flavour when dried.
