Vegetarian meatballs are a good alternative to the meat version. With a few vegetables and rice, you can prepare the meatballs in no time at all
Simple recipe for vegetarian meatballs
Vegetarian meatballs are a tasty substitute for the meat version. With rice and lots of vegetables, you can conjure up a healthy dish.
- For four meatballs you need two carrots and two medium-sized onions, two organic eggs, 150 grams of grated Emmental cheese and 150 grams of rice.
- In addition, you will need one liter of vegetable stock, three tablespoons of mixed frozen herbs, one teaspoon of clarified butter and breadcrumbs.
- First peel and grate the carrots. Cut the onions into small cubes and place them in a bowl with the grated carrots and Emmental cheese.
- Meanwhile, bring the vegetable stock to the boil. Add the rice. It will be cooked after approx. 15 minutes. Then pour off the excess water and leave the rice to cool.
- As soon as it is cold, mix the rice with the vegetables. Now add the organic eggs and stir everything together. Season the whole mixture well with the herbs, salt and pepper
- Gradually mix in the breadcrumbs. You should end up with an even mixture. Leave this to rest for a quarter of an hour
- Then form the meatballs from the mixture and roll them in the remaining breadcrumbs.
- Finally, fry the meatballs in the pan until golden brown. Heat them with the clarified butter beforehand. Drain the meatballs on kitchen paper before serving.
Variants of the vegetable meatball
The preparation of meatballs can be varied as desired:
- Add vegetables to the basic mixture as desired. It is important that you finely grate or dice them so that the final mixture does not crumble. For example, you can also use broccoli instead of rice for the base of the meatballs.
- 300 grams of broccoli is enough for four portions. Wash, clean and chop the broccoli. Then cook the broccoli florets for approx. seven minutes. Then mash the vegetables with a fork and form meatballs from the mixture. You can now fry these as described above.
- Oat flakes also make a good filling. With 250 grams of rolled oats, 200 grams of quark, a grated zucchini and paprika, you can conjure up equally tasty vegetarian meatballs. The remaining ingredients are the same as in the basic recipe
- First mix the vegetables and oat flakes. Then add the low-fat quark and form the meatballs. Fry as described in the recipe above
- You can also use couscous to make the meal vegan. Add 1.5 times the amount of boiling water to the couscous and allow it to swell until all the water has disappeared. You can then add grated vegetables and eggs and fry the meatballs.
